ABSTRACT

Antecedentes: Las enfermedades no transmisibles siguen siendo un problema creciente en el mundo, sobre todo en los países de mediano y bajo ingresos. Los programas de intervención comunitaria se enfocan en su disminución mediante cambios en estilos de vida más saludables. Objetivos: Analizar la tendencia del programa de intervención en actividad física y nutrición, como estrategia para mejorar las dislipidemias y glucemia en los participantes del proyecto DemoMinga. Materiales y métodos: Estudio con enfoque cuantitativo. Diseño de investigación acción participativa, de carácter longitudinal, prospectivo. La población estuvo constituida por los participantes del Proyecto DemoMinga. Se determinó en cada participante: colesterol total, triglicéridos y glucemia en ayunas. Las muestras fueron procesadas en el Centro de Investigaciones Médicas de la FACISA-UNE. Se determinaron indicadores de tendencia central (mediana) de cada una de las variables. Resultados: Hubo mayor participación del sexo femenino, con predominio de personas con menos de 45 años. Las mediciones químicas arrojaron una tendencia de disminución a partir del quinto año de intervención, con talleres de cocina saludable incluyendo uso de aceite alto oleico, y actividad física. Sin embargo, la prueba no arrojó diferencias significativas de las mediciones entre la línea de base y el corte a los 6 años. Conclusión: El estudio resalta la importancia de los programas de intervención mediante terapias integrales para la promoción y prevención de las enfermedades cardiometabólicas a largo plazo.

Community intervention programs are focused on reducing their prevalence through promoting healthier lifestyle changes. Objectives: To analyze the trend of the physical activity and nutrition intervention program as a strategy to improve dyslipidemia and glycemia among participants of the DemoMinga project. Materials and methods: This study employed a quantitative approach with a participatory action research design, characterized as longitudinal and prospective. The population consisted of participants from the DemoMinga Project. For each participant, total cholesterol, triglycerides, and fasting glycemia were measured. Samples were processed at the Medical Research Center of FACISA-UNE. Indicators of central tendency (median) were determined for each of the variables. Results: There was a higher participation of females, with a predominance of individuals under the age of 45. Chemical measurements showed a decreasing trend starting from the fifth year of intervention, involving healthy cooking workshops that included the use of high oleic oil and physical activity. However, the test did not yield significant differences in measurements between the baseline and the 6-year cutoff. Conclusion: The study highlights the significance of intervention programs using comprehensive therapies for the long-term promotion and prevention of cardiometabolic diseases.

ABSTRACT Previous studies by us demonstrated that the consumption of thermally oxidized oil diet adversely affects body growth, lipid metabolism, bone mass and femur biomechanical competence. Aim: The aim of this study was to evaluate the effects of a diet containing fried sunflower oil on the mandible of growing rats. Materials and Method: Male Wistar rats (21±1 day old) (n=21) were assigned at weaning to one of three diets for 8 weeks: a control diet (C), a diet containing sunflower oil (SFO) or a diet containing sunflower oil that had been repeatedly heated (SFOx); both SFO and SFOx were mixed with commercial rat chow at 13% (w/w). The consistency and viscosity of the 3 diets were similar. Zoometrics and food intake were recorded weekly. At wk=8, mandibular growth was assessed by measurements of anatomical points of cleaned bones, and mandible biomechanical competence was assessed to estimate the structural properties of the bone. Statistical analysis was performed by SPSS v. 20.0. Results: Rats fed SFOx diet attained the lowest final body weight (P=0.0074), mandibular weight (P=0.0001) and mandibular /length (P=0.0002). Load bearing capacity (Wf;N), load of yielding (Wy;N) and stiffness (Wy/dy;N/mm) of the mandible were negatively affected by both sunflower oil diets (fresh and fried) (P=0.001; P=0.002; P=0.003, respectively) though SFOx induced the most significant reduction in Wy/dy (C:44.4(5.4) > SFO:36.1(2.1) > SFOx: 26.3(3.7) N/ mm; P=0.003). The deleterious effect of SFOx on mandibular growth was more accentuated on the posterior part of the bone (C:11.4(0.3)=SFO:11.2(0.2)>SFOx: 10.7(0.2) mm; p=0.0005); the anterior/ posterior ratio (C:1.25(0.02)=SFO:1.27(0.02)<SFOx:1.32(0.03); p=0.0001) indicated that SFOx induced mandibular deformation. Conclusion: Consumption of SFOx diet during growth could affect mandibular morphometric properties and biomechanical competence, in terms of bone stiffness.


RESUMEN En estudios previos hemos demostrado los efectos adversos del consumo de una dieta rica en aceite termooxidado sobre el crecimiento corporal, el metabolismo de los lípidos, la masa ósea y la competencia biomecánica del fémur. Objetivo: El objetivo de este trabajo fue investigar el efecto de una dieta rica en aceite de girasol termooxidado (AGX) sobre los parámetros morfométricos y biomecánicos de la mandíbula de rata en crecimiento. Materiales y Método: Ratas macho Wistar de 22±1 días de edad (n=21) recibieron durante 8 semanas una de 3 dietas: control (C); dieta comercial, una dieta suplementada con aceite de girasol (AG) y una dieta suplementada con AGX. La consistencia y la viscosidad de las dietas fueron similares. Los parámetros zoométricos y el consumo de dieta se registraron semanalmente. A T=8, los animales se eutanasiaron y se obtuvieron las hemimandíbulas. El crecimiento mandibular se estimó por medidas morfométricas entre puntos anatómicos y las propiedades estructurales por biomecánica. El análisis estadístico se realizó por SPSS v. 20.0. Resultados: Las ratas alimentadas con AGX presentaron menor peso corporal final (p=0.0074), peso mandibular (p=0.0001) y longitud mandibular (p=0.0002). Las propiedades estructurales de la mandíbula, Wf (p=0.001), Wy (p=0.002) y Wy/dy (p=0.003), se vieron afectadas negativamente en ratas alimentadas con AG o AGX, respecto a C; pero la rigidez ósea (Wy/dy) en AGX fue significativamente menor (C:44.4(5.4) > SFO:36.1(2.1) > SFOx: 26.3(3.7) N/mm; p=0.003). El efecto deletéreo del AGX sobre el crecimiento mandibular fue más acentuado en la región posterior (C:11.4(0.3)=SFO:11.2(0.2)>SFOx: 10.7(0.2) mm; p=0.0005). La relación anterior/posterior (C=1.25 (0.02); AG= 1.27(0.02) y AGX=1.32(0.03), p=0.001) indica que AGX indujo deformación mandibular. Conclusiones: El efecto adverso del consumo de una dieta rica en AGX durante el crecimiento podría afectar los parámetros morfométricos y la biomecánica ósea en términos de rigidez ósea.

Aims@#Every year, an estimated 25 million tons of waste oil are produced worldwide, and the generation of waste oil is one of the biggest global environmental problems. The incorporation of oil as a substrate for lipase production has been studied and shown to have a positive impact on its production. Burkholderia sp. is one of the major lipase-producing bacteria with their ability in bioremediation of oil-contaminated soil. This study aims to compare the production of lipase by Burkholderia cenocepacia ST8 using waste cooking oil and unused cooking oil as feedstock.@*Methodology and results@#The effect of different types of waste cooking oil (sunflower oil and palm oil) and concentration (1-3%) of waste cooking oil, agitation speed (100-400 rpm) and initial dissolved oxygen concentration (10-50%) on lipase production by B. cenocepacia ST8 under batch fermentation mode were investigated. The major fatty acids of which had been consumed were determined using gas chromatography. Results showed that 2% (v/v) of single used sunflower cooking oil produced the highest lipase activity of 138.86 U/mL with a productivity of 2.10 U/mL/h; agitation speed of 300 rpm produced the highest lipase activity of 183.56 U/mL with a productivity of 3.06 U/mL/h while 30% initial concentration of dissolved oxygen produced a lipase activity of 176.45 U/mL with a productivity of 2.94 U/mL/h. Oleic acid and linoleic acid were found to be the most consumed by B. cenocepacia ST8 among other fatty acids. @*Conclusion, significance and impact of study@#This study shows that 2% (v/v) single used sunflower cooking oil was the better type and optimum concentration of carbon source for the production of lipase by the fermentation of B. cenocepacia under 300 rpm and 30% initial concentration dissolved oxygen. The incorporation of 2% (v/v) single used sunflower cooking oil may be a great alternative to reduce the cost for the production of lipase as well as reducing the amount of waste oil generation.

0.05). However, serum IL-6 levels significantly decreased in the flaxseed oil group compared to the sunflower oil group (p = 0.017). No side effect was observed during the study due to the use of sunflower and flaxseed oils. We observed that consumption of flaxseed oil improved serum IL-6 levels but had no effect on oxidative stress and coagulation score in patients with MetS. ABSTRACT

As gorduras ricas em ácidos graxos saturados e/ou trans são ingredientes que brindam propriedades nos alimentos como textura, fusão e estabilidade. Porém, a relação entre seu consumo e enfermidades cardiovasculares, força a busca de novas alternativas. Uma alternativa potencial são os oleogéis, pois são um material plástico e com melhor balanço lipídico, do ponto de vista nutricional. Os oleogéis são sistemas coloidais onde uma fase orgânica líquida, representada por um óleo, é imobilizada por uma rede sólida tridimensional formada por agentes estruturantes. Atualmente, tem sido estudados oleogéis conformados com variados agentes estruturantes, com o intuito de encontrar a melhor opção. Além disso, alguns estudos indicam que o uso combinado de dois ou mais agentes estruturantes pode resultar no aumento de seu potencial de estruturação de óleos ou na possibilidade de customizar as propriedades adequadas para produção alimentar. Assim, o objetivo deste estudo é avaliar a interação entre os componentes de oleogéis preparados com óleo de girassol alto oleico (HOSO), como base lipídica, e combinações de cera de candelilla (CW) e monoestearato de sorbitana (SMS), como agentes estruturantes. A avaliação dos oleogéis por meio dos diagramas de fases e a consistência, mostrou que há uma sinergia entre os componentes, na concentração de 8 e 4% de agentes estruturantes e 79-89% de cera de candelilla. Estes oleogéis mistos tiveram uma faixa de fusão maior do que os oleogéis não mistos. Sugerindo a construição de cristais mais estáveis, que demoraram mais tempo em fundir. A capacidade de retenção de óleo se mostrou adequada (99%) nas amostras contendo mais de 1% de agentes estruturantes e com mais de 40% de Cera de Candelilla. Nas imagens obtidas por PLM, foi observada uma variedade de tamanho de cristais, sugerindo que cada componente do oleogel formou um tipo de cristal. Com a elaboração de bigéis, foi notado que, para obter um produto satisfatoriamente espalhável ou para observar o aumento de sua consistência em comparação com o oleogel isoladamente, é necessária uma concentração maior do que 4% de agentes estruturantes no oleogel e/ou a adição de menos de 20% de água na formulação total. A estabilidade dos bigéis foi beneficiada pela goma xantana e pela mistura de 2:1 de goma xantana e goma guar na concentração de 0,3%. Dessa forma, o desenvolvimento de alimentos com teores reduzidos de gorduras saturadas e ao mesmo tempo livres de gorduras trans se faz possível com a formulação de oleogéis, o que poderá contribuir para melhorar a qualidade nutricional dos alimentos industrializados oferecidos à população


Fats rich in saturated and / or trans fatty acids provide properties in food such as texture, fusion and stability. But, since those fats increase cardiovascular disease risk, alternatives have been searched. A potential alternative is oleogels, as they are a plastic material with better lipid balance from a nutritional point of view. Oleogels are colloidal systems where a liquid organic phase, represented by an oil, is immobilized by a three-dimensional solid network formed by structuring agents. Currently, oleogels conformed with various structuring agents have been studied in order to find the best option. In addition, some studies indicate that the combined use of two or more structuring agents may result in increased oil structuring potential or the possibility of customizing the properties suitable for food production. Thus, the aim of this study is to evaluate the interaction between the components of oleogels prepared with high oleic sunflower oil (HOSO) as a lipid base and combinations of candelilla wax (CW) and sorbitan monostearate (SMS) as structuring agents. The evaluation of oleogels by phase diagrams and consistency (Yield value) showed that there is a synergy between the components, in the concentration of 8 and 4% of structuring agents and 79-89% of candelilla wax. These mixed oleogels had a higher melting range than unmixed oleogels. Suggesting the construction of more stable crystals, which took longer to fuse. Oil binding capacity was adequate (99%) in samples containing more than 1% of structuring agents and over 40% of candelilla wax. In the PLM images, a variety of crystal sizes were observed, suggesting that each oleogel component formed a crystal type. With the elaboration of bigels, it was noted that in order to obtain a satisfactorily spreadable product or to observe the increase of its consistency compared to the oleogel alone, a concentration greater than 4% of structuring agents in the oleogel and / or the addition of less than 20% water in the total formulation. The stability of the bigels was benefited by xanthan gum and the 2: 1 mixture of xanthan gum and guar gum at a concentration of 0.3%.Thus, the development of foods with reduced levels of saturated fat and at the same time free of trans fats is possible with the formulation of oleogels, which may contribute to improve the nutritional quality of processed foods offered to the population

Objective To compare the effects of high-monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) against the metabolic disorders elicited by a high-cholesterol diet (HC) in rats. Methods Using in vivo dietary manipulation, rats were fed with different diets containing 4% soybean oil (cholesterol free diet) and 1% HC containing 12% olive oil (HC + OO) enriched with MUFA and 12% sunflower oil (HC + SO) enriched with PUFA for 60 d. Serum lipid levels and hepatic steatosis were evaluated after the treatment period. Results Comparatively, rats treated with HC + OO diet experienced a decrease in the serum LDL-C, VLDL-C and CT levels compared to those fed with HC + SO diet (P < 0.05). Otherwise, HC + OO provoked significant microvesicular steatosis situated in the hepatic acinar zone 1. Conclusions HC + OO diet has high absorption velocity in the acinar zone 1 of liver compared to the HC + SO diet. Based on this, the reduction of the LDL-C, VLDL-C and CT serum levels in the animals treated with HC + OO diet may have been caused by the delay in the FA release to the blood.

ABSTRACT

Mono e diacilgliceróis são produtos empregados na indústria alimentícia, farmacêutica, cosmética e química como emulsificantes e melhoradores de viscosidade de produtos alimentícios, cosméticos e farmacêuticos. No entanto, a forma mais usual de obtê-los é por síntese química, o que acaba rendendo produtos finais caros e com atributos de qualidade, rendimento e de aplicabilidade tecnológica inferiores aos esperados. A busca por formas de obtenção mais racionais, eficientes e com melhor padrão de qualidade destes produtos foi o objetivo principal do trabalho, por meio de hidrólise parcial enzimática, que necessita de condições de reação mais brandas. Foram avaliadas a hidrólise enzimática descontína, empregando como substrato a trioleína técnica, e a hidrólise enzimática descontínua-alimentada, usando como substrato o óleo de girassol médio oléico. Foi utilizada, em ambos processsos, a lipase imobilizada sn-1,3 específica Lipozyme RM IM (de Rhizomucor miehei). A caracterização dos padrões e dos substrados, bem como o acompanhamento da formação dos produtos da hidrólise enzimática foram feitos por determinação da porcentagem de hidrólise, cromatografia em camada delgada (TLC), dos perfis das curvas de fusão e cristalização por calorimetria diferencial de varredura (DSC), cromatografia gasosa (CG) e cromatografia de exclusão de tamanho de alto desempenho (HPSEC). Os parâmetros de hidrólise descontínua foram o tempo de reação, a temperatura e a concentração inicial de substrato. Os parâmetros de hidrólise descontínua-alimentada foram tempo de enchimento e intervalo de alimentação de substrato. Para as respostas analíticas de porcentagem de hidrólise e de composição de frações lipídicas foi aplicado um modelo de regressão múltipla com base em metodologia de superfície de resposta. Os resultados experimentais observados nas reações de hidrólise enzimática descontínua de trioleína técnica mostraram de 24,7 a 34,2% de mono e diacilgliceróis (para 5% de óleo na emulsão) e de 21,4 a 33,6% de mono e diacilgliceróis (para 20% de óleo na emulsão). Os resultados experimentais observados nas reações de hidrólise enzimática descontínua-alimentada de óleo de girassol médio oléico (para 15% de óleo na emulsão), mostraram de 7,9 a 31,8% de mono e diacilgliceróis. Os modelos de superfície de resposta foram considerados significativos e preditivos. As hidrólises obtidas no formato descontínuo e descontínuo-alimentado permitiram efetivamente a obtenção de frações de mono/ diacilgliceróis com vários graus de eficiência de conversão e com corretas identificação e quantificação das frações de lipídios procuradas. As correlações feitas entre porcentagem de hidrólise e entalpias de cristalização e fusão, corroboradas com os resultados qualitativos e/ou quantitativos diretos obtidos na cromatografia de camada delgada (TLC) e de HPSEC, demonstraram que estes atributos podem positivamente indicar a ocorrência efetiva de reação de hidrólise, além de auferir uma escala de desempenho de reação alinhada com o previsto na literatura, à medida que são aumentadas a temperatura, o tempo de hidrólise e a porcentagem inicial de substrato oleoso, sob regime descontínuo, e que puderam ser melhoradas, de forma inovadora, sob parâmetros de tempo total de alimentação e de intervalo de alimentação, sob regime descontínuo-alimentado. A hidrólise parcial enzimática de triacilgliceróis utilizando lipase imobilizada sn-1,3 específica pode ser considerada uma alternativa às vias químicas para a produção de misturas de mono e diacilgliceróis para utilização como aditivos químicos.


Mono and diacylglycerols are products used in the food, pharmaceutical, cosmetic and chemical industries as emulsifiers and viscosity improvers for food products, cosmetics and pharmaceuticals. However, the most usual forms of obtaining them are by chemical synthesis, which ends up yielding expensive final products with attributes of quality, yield and technological applicability lower than expected. The search for more rational, efficient and better quality standards of these products was the aim of the work, through partial enzymatic hydrolysis, which requires milder reaction conditions. Discontinuous enzymatic hydrolysis was evaluated using technical triolein as substrate and discontinuous-fed enzymatic hydrolysis using as the substrate the mid oleic sunflower oil. In both processes, immobilized lipase sn-1,3 specific Lipozyme RM IM (from Rhizomucor miehei) was used. The characterization of the patterns and substrates, as well as the monitoring of the formation of the products from the enzymatic hydrolysis were made by determining the percentage of hydrolysis, thin layer chromatography (TLC), profiles of the melting and crystallization curves by differential scanning calorimetry ( DSC), gas chromatography (GC) and high performance size exclusion chromatography (HPSEC). The parameters of discontinuous hydrolysis were the reaction time, the temperature and the initial substrate concentration. The parameters of discontinuous-fed hydrolysis were filling time and substrate feed interval. For the analytical responses of hydrolysis percentage and composition of lipid fractions a multiple regression model was applied based on response surface methodology. The experimental results observed in the reactions of discontinuous enzymatic hydrolysis of technical triolein indicated amounts of mono- and diacylglycerols from 24.7 to 34.2% (for 5% of oil in the emulsion) and from 21.4 to 33.6% for mono and diacylglycerols with 20% oil in the emulsion. The experimental results observed in the reactions of discontinuous-fed enzymatic hydrolysis of mid oleic sunflower oil (for 15% oil in the emulsion), showed from 7.9 to 31.8% of mono and diacylglycerols. Response surface models were considered significant and viii predictive. The hydrolysis obtained in the discontinuous and discontinuous-fed form allowed to obtain fractions of mono / diacylglycerols with various degrees of conversion efficiency and with correct identification and quantification of the lipid fractions sought. The correlations between the percentage of hydrolysis and enthalpies of crystallization and fusion, corroborated with the qualitative and / or quantitative direct results obtained in thin layer chromatography (TLC) and HPSEC, showed that these attributes can positively indicate the effective occurrence of reaction of Hydrolysis, in addition to achieving a reaction performance scale in line with the literature, as the temperature rate, the hydrolysis time and the initial percentage of oily substrate are increased under a discontinuous regime and can be improved, in a innovative form, under parameters of total filling time and feeding interval, under a fed-batch regime. The partial enzymatic hydrolysis of triacylglycerols using specific sn-1,3-specific immobilized lipase may be considered an alternative to the chemical pathways for the production of mono- and diacylglycerol blends for use as chemical additives.

RESUMEN Antecedentes la cocción de alimentos en horno microondas es una tendencia en aumento en la población en general, sin que se tenga en cuenta el efecto sobre su calidad. Objetivo evaluar el efecto del extracto de Bixa orellana sobre aceite de girasol durante el calentamiento en microondas. Materiales y métodos aceite de girasol, con y sin la adición de extracto de Bixa orellana 100 ppm, se sometió a calentamiento durante 12 minutos en horno microondas evaluándose sus propiedades fisicoquímicas a distintos intervalos de tiempo. Resultados la adición de Bixa orellana contribuye a conservar la calidad del aceite de girasol sometido al microondas durante los tres primeros minutos de calentamiento. A tiempos mayores, dadas las temperaturas alcanzadas, no se observa efecto protector. Conclusión la adición de 100 ppm de extracto de Bixa orellana en aceite de girasol permite contrarrestar la oxidación durante tres minutos de calentamiento en microondas.


ABSTRACT Background Microwave cooking is a growing trend in the general population, which does not take into account the effect on food quality. Objective: To evaluate the effect of the extract of Bixa orellana on sunflower oil during microwave heating. Materials and methods Sunflower oil was heated during 12 minutes in a microwave, with and without the addition of 100 mg extract of Bixa orellana, and physicochemical properties were evaluated at different time intervals. Results The addition of Bixa orellana extract contributes to preserve the quality of the sunflower oil during the first three minutes of heating. For longer periods, no protective effect is observed. Conclusion The addition of 100 mg of extract of Bixa orellana on sunflower oil was capable to avoid the oxidation during microwave heating for three minutes.

Background Strawberries are non-climacteric fruits with a low respiration rate, but are subject to serious fungal deterioration during postharvest handling. The edible coatings based on chitosan (CH), quinoa protein-chitosan (Q/CH) and quinoa protein-chitosan-sunflower oil (Q/CH/SO) may provide a solution to this problem. Thus, in this work CH, Q/CH and Q/CH/SO were elaborated and applied to fresh strawberries, and its effect on the strawberries shelf life during storage for 15 d was evaluated by mold and yeast count, fungal decay, carbon dioxide rate, physicochemical properties, and sensory evaluation. Results On all analysis days, the strawberries coated with the film-forming CH, Q/CH and Q/CH/SO solutions presented a significant lower amount of mold and yeast growth than the uncoated strawberries. Coated strawberries with Q/CH/SO decreased the CO2 emission rate by 60% compared to the uncoated strawberries. The color of the strawberries was not influenced by the films. There was no significant difference between the different coating groups and the uncoated group in the physicochemical parameters. Sensory analysis showed that the coating application retained the total sensorial quality. Conclusions Fresh strawberries coated with CH, Q/CH/SO and Q/CH edible films had longer shelf lives than uncoated fruits.

ABSTRACT

This study aim to isolate, identify a bacterial isolate and optimize production medium using frying oil waste for lipase production. Nine strains were isolated from an Egyptian soil samples. Among the isolates, a potent bacterial candidate ASSCRC-P1 was found to be the most potent lipase producer strain at 60 °C. Genotypic identification of ASSCRC-P1 showed 94% similarity with Bacillus sp. strains. Phylogenetic tree confirmed that ASSCRC-P1 was nearly similar to Bacillus cereus. Therefore, it was given the name Bacillus cereus ASSCRC-P1 and its 16S rRNA nucleotide has been deposited in the GenBank Data Library under the accession number: KJ531440. A sequential optimization strategy, based on statistical experimental designs, was employed to enhance the lipase production by this strain. A 2-level Plackett–Burman design was applied to differentiate between the bioprocess parameters that significantly influence lipase production followed by Box-Behnken design to optimize the amounts of variables which have the highest positive significant effect on lipase production. Overall more than 2.15-fold improvement in lipase production was achieved due to optimization compared to that obtained using the basal medium.

Antecedentes: el perfil de ácidos grasos en los aceites de cocina tiene repercusiones en la salud humana. Objetivo: determinar el perfil de ácidos grasos de algunos aceites de empleo casero, previo uso. Materiales y métodos: se seleccionaron 14 marcas comerciales de aceites (oliva, canola, girasol y mezclas de aceites) según las ventas reportadas en un hipermercado de Medellín- Colombia. El perfil de ácidos grasos se determinó por cromatografía de gases y se analizaron las diferencias entre los tipos de aceites. Resultados: comparando los tipos de aceites presentó mayor porcentaje de ácidos grasos saturados la mezcla de aceites (16,9±1,5%) (p=0,02), de monoinsaturados, oliva (78,1±0,4%) y canola (62,4±0,7%) (p=0,01) y de poliinsaturados, mezclas (54,7±2,4%) y girasol (52,4±5,2) (p=0,02). En todos los aceites los ácidos grasos predominantes fueron: de saturados el palmítico, de monoinsaturados el oleico y de poliinsaturados el linoleico. El aceite de canola mostró mayor aporte de α-linolénico (8,1±1,5%) (p=0,04), mayor relación insaturados/ saturados (12,0±0,1%) (p=0,02) y menor linoleico/linolénico (2,4±0,4%) (p=0,02). El aporte de trans varió entre 0,9±0,9 y 1,8±1,3% sin diferencias significativas (p=0,17). Conclusiones: el aceite con mejor perfil de ácidos grasos, por el mayor aporte de α-linolénico, mayor relación insaturados/ saturados y menor linoleico/linolénico fue el de canola.


Background: Fatty acids profile in cooking oils has repercussions on human health. Objective: To determine fatty acids profile in cooking oils used at home, before frying. Materials and methods: 14 different commercial oil brands (from olive, canola, sunflower oil, and mixtures) were selected according to sells reported by a hypermarket in Medellín-Colombia. Fatty acids profile was determined by gas chromatography and differences between oils were analyses. Results: Compared with other brands, mixture oils had the highest percentage of saturated fatty acid (16,9±1,5%) (p=0,02); olive and canola oils the highest percentage of monounsaturated, 78,1±0,4% and 62,4±0,7% respectively(p=0,01); mixtureandsunflower oils hadthe highest percentage of polyunsaturated, 54,7±2, 4% and 52,4±5,2 respectively (p=0,02). Palmitic (saturated), oleic (monounsaturated), and linoleic acids (polyunsaturated) were the predominant fatty acids found in all oils. Canola oil had the highest content of α-linolenic acid (8, 1±1,5%) (p=0,04), the biggest relation between unsaturated and saturated fatty acids (12,0±0,1%) (p=0,02), and the lowest relation between linoleic and linolenic acid (2,4±0,4%) (p=0,02). Range of trans fatty acid content was 0,9±0,9 to 1,8±1,3% without differences between brands (p=0,17). Conclusions: Canola oils had the best fatty acid profile based on: α-linolenic content, unsaturated/saturated ratio and linoleic/ linolenic acid ratio.

ABSTRACT

Oil pulling is extensively used as a traditional Indian folk remedy without the scientific proof for many years to prevent decay, bleeding gums, oral malodor, dryness of throat, cracked lips and for strengthening teeth, gums, and jaws. This paper reviewed the literature on oil pulling based on the scientific articles available under the following subheadings: (1) Introduction (2) history (3) procedure (4) mechanism (5) benefits (6) discussion (7) summary (8) conclusion. Oil pulling or oil swishing is the ayurvedic way of maintaining oral health and improving overall immune system. Oil also pulling acts as an excellent detoxifying agent in healing the body inside. Oil pulling is a procedure in which the practitioners rinse their mouth with approximately one tablespoon of an ordinary cooking oil for 3-20 min, then spits it out. This procedure is typically performed daily. In this narrative review, authors try to illustrate different types of oil used for oil pulling and their oral benefits and general benefits on the health. Various oils used for swishing (pulling) the oral cavity-coconut oil, palm oil, corn oil, rice bran oil, sesame oil, sunflower oil, soybean oil, etc. Though oil pulling is effective, none of the studies considered it as a replacement for the tooth brushing, but can definitely be a supplemental oral hygiene aid.

Background: milk fatty acid composition has become very important for consumers due to the positive relationship that has been found between some fatty acids and human health. In recent years, content and fatty acid composition in the different fractions of milk lipids has also become important due to reported potential technological and sensory implications. Objective: the aim of this study was to evaluate the effect of dietary supplementation with several lipid supplements on the proportion of neutral (triglycerides) and polar lipids (phospholipids) of milk fat, alterations of the fatty acid composition and Conjugated Linolenic Acid isomers (CLA) of total milk lipids. Methods: 18 first lactation German Holstein cows were assigned to three dietary treatments for 10 weeks as follows: Rumen-stable fractionated palm fat, linseed oil plus algae, and sunflower oil plus algae. Results: dietary polyunsaturated fat supplements increased the proportion of phospholipids and decreased triglycerides in milk fat compared to Rumen-stable fractionated palm fat. Long chain polyunsaturated fatty acids were preferentially deposited into phospholipids. Diet effect was more pronounced in triglycerides than in phospholipids. Plant oil/algae supplemented diets induced lower proportions of total saturated fatty acids and higher proportions of total unsaturated fatty acids in triglycerides. Conclusions: linseed oil plus algae feeding generated the best results in reference to fatty acids related to human health. Sunflower oil plus algae caused accumulation of CLAtrans-10,cis-12, CLAtrans-7,cis-9, CLAtrans-7,trans-9 and CLAtrans-10,trans-12 and decrease of CLAtrans-9,trans-11 in total milk fat, whereas linseed oil plus algae increased CLAtrans-12,trans-14, CLAtrans-11,trans-13, and CLAtrans-11,cis-13 deposition compared to rumen-stable fractionated palm fat.


Antecedentes: la composición de ácidos grasos de la leche ha tomado gran importancia para los consumidores a causa de la relación positiva que se ha encontrado entre algunos ácidos grasos y la salud humana. En los últimos años, el contenido y composición de ácidos grasos en las diferentes fracciones de los lípidos de la leche también ha tomado importancia debido a las posibles implicaciones tecnológicas y sensoriales que se han reportado. Objetivo: el objetivo del presente estudio fue evaluar los cambios en la proporción de lípidos neutros (triglicéridos) y lípidos polares (fosfolípidos) y alteraciones de la composición de ácidos grasos e isómeros del Ácido Linoléico Conjugado (CLA) del total de lípidos de la leche como resultado de la suplementación dietaria con diferentes suplementos lipídicos. Métodos: 18 vacas Holstein Alemán de primera lactancia fueron asignadas a tres tratamientos dietarios durante 10 semanas, así: grasa de palma fraccionada y estable al rumen, aceite de lino más alga, y aceite de girasol más alga. Resultados: la suplementación con ácidos grasos poliinsaturados incrementó la proporción de fosfolípidos y disminuyó la de triglicéridos en la grasa de la leche comparado con grasa de palma fraccionada y estable al rumen. Los ácidos grasos poliinsaturados de cadena larga fueron preferencialmente depositados en los fosfolípidos. El efecto de la dieta fue más pronunciado en los triglicéridos que en los fosfolípidos. Las dietas suplementadas con aceite vegetal y alga indujeron a menores proporciones de ácidos grasos saturados y mayores proporciones de ácidos grasos insaturados en los triglicéridos. Conclusiones: la suplementación con aceite de lino más alga generó los mejores resultados respecto a la composición de ácidos grasos relacionados con la salud humana. El aceite de girasol más alga causó una acumulación de isomeros CLAtrans-10,cis-12, CLAtrans-7,cis-9, CLAtrans- 7,trans-9 y CLAtrans-10,trans-12 y disminuyó CLAtrans-9,trans-11 en la grasa total de la leche mientras que el aceite de lino más alga incrementó CLAtrans-12,trans-14, CLAtrans-11,trans-13, y CLAtrans-11,cis-13 comparado con la grasa de palma fraccionada y estable al rumen.

Nos últimos anos, o conteúdo e composição dos ácidos graxos nas diferentes frações lipídicas no leite também se tornaram importantes devido às consequências tecnológicas e sensoriais que tem sido reportada recentemente. Objetivo: realizou-se um estudo para avaliar as mudanças na proporção de lipídios neutros (triglicerídeos) e polares (fosfolipídios) na gordura do leite e as alterações da composição dos ácidos graxos e os isômeros do Ácido Linoleico Conjugado (CLA) no total dos lipídeos do leite como resultado da suplementação na dieta com diferentes suplementos lipídeos. Métodos: 18 vacas Holandesas na Alemanha, todas de primeira lactação foram avaliadas em três tratamentos com regimes alimentares diferentes durante 10 semanas, assim: óleo de palma fracionada e estável no rúmen, óleo de linhaça mais algas e óleo de girassol mais algas. Resultados: a suplementação com ácidos graxos poli-insaturados incrementou a proporção de fosfolipídios e diminuiu a proporção de triglicerídeos na gordura do leite, comparado com o óleo de palma fracionada e estável no rúmen. Os ácidos graxos poliinsaturados de cadeia longa foram preferencialmente depositados nos fosfolipídios. O efeito da dieta foi mais pronunciado nos triglicerídeos que nos fosfolipídios. As dietas que foram suplementadas com óleo vegetal mais algas reduziram a proporção de ácidos graxos saturados, e aumentaram a proporção de ácidos graxos insaturados nos triglicerídeos. Conclusões: a suplementação com óleo de linhaça mais alga gerou os melhores resultados respeito à composição dos ácidos graxos relacionados com a saúde humana. O óleo de girassol mais alga causaram uma acumulação de CLAtrans-10, cis-12, CLAtrans-7, cis-9, CLAtrans-7, trans-9 e CLAtrans-10, trans-12 e diminuiu CLAtrans-9, trans-11 na gordura total do leite, enquanto que óleo de linhaça mais alga aumentou a deposição de CLAtrans-12, trans-14, CLAtrans-11, trans-13, e CLAtrans-11, cis-13, em comparação com o óleo de palma fracionada e estável no rúmen.

ABSTRACT

Today’s consumer looking for wholesome food without chemical preservatives. These can be classified as novel compounds obtained from sunflower oil based nanoemulsions that delay microbial growth of pathogens and spoilage organisms in food. Sunflower oil was screened for the development of a surfactin based nanoemulsion formulation. On further screening for antibacterial activity sunflower oil-based nanoemulsion designated as AUSN-1 showed highest activity against Pseudomonas aeruginosa followed by Bacillus cereus, Proteus mirabilis, Acinetobacter baumannii , Bacillus sp and Aeromonas sp. AUSN-1 also demonstrated a high bacteriostatic and bactericidal con (%) against Pseudomonas aeruginosa, Bacillus cereus respectively.Their role in controlling food pathogens and mechanisms of action. This work suggests the possible use of nanoemulsion as preservatives in meat products.

The oil was efficacious against several clinical fungal strains: Candida parapsilosis, Candida albicans, Trichosporonasahii, Candida tropicalis and Candida guilliermondii.

As dietas ricas em lipídios saturados provocam efeitos deletérios no metabolismo de glicose, secreção de adipocinas e inflamação, entretanto, outros tipos de lipídios podem modular de forma diferenciada tais efeitos. Assim, o objetivo deste trabalho foi investigar o efeito de diferentes dietas hiperlipídicas no metabolismo de carboidratos, lipídios, no tecido adiposo e no fígado. Camundongos machos C57BL/6 foram divididos em 5 grupos (n=10/grupo): animais que receberam dieta controle (standart chow, SC, 10% de lipídios, grupo controle) e animais que receberam diferentes dietas hiperlipídicas (High-fat, HF, 60% de lipídios): à base de banha de porco (lard, grupo HF-L), à base de óleo de oliva (olive oil, grupo HF-O), à base de óleo de girassol (sunflower oil, grupo HF-S) e à base de óleo de canola (canola oil, grupo HF-Ca).Os animais foram alimentados com as dietas experimentas por 10 semanas. Diariamente a ingestão alimentar era verificada e semanalmente a massa corporal foi aferida. A glicose de jejum e o teste intraperitoneal de tolerância a insulina (TITI) foram realizados uma semana antes da eutanásia. No dia da eutanásia o sangue foi coletado, o tecido adiposo e o fígado dissecados e pesados. A insulina, leptina, adiponectina, resistina, fator de necrose tumoral alfa (TNFα), interleucina-6 (IL-6), proteína quimiotática de monócitos-1 (MCP-1) e inibidor do ativador de plasminogênio-1 (PAI-1) foram dosadas por ELISA. Com os dados de insulina e glicose foi calculado o índice HOMA-IR. Os animais dos grupos HF-L e HF-O apresentaram os maiores valores de insulina, resistina, leptina e HOMA-IR em comparação aos outros grupos (P < 0,0001)...


Diets rich in saturated fat have a deleterious effect on glucose metabolism, adipokine release and inflammation. However, other lipid sources may modulate these parameters differently. Thus, the aim of the present work was to investigate the effect of high-fat diets from different sources on carbohydrate and lipid metabolism, adipose tissue and liver. Male C57BL/6 mice were allocated into 5 groups (n=10/group): standard chow fed mice (SC, 10% lipid, control group), and mice fed with high-fat diets (HF, 60% lipids) as follow: lard (HF-L), olive oil (HF-O), sunflower oil (HF-S), and canola oil (HF-C). Diets were offered for 10 weeks. Food intake was recorded daily and body mass weekly. One week before euthanasia, fasting glucose and intraperitoneal insulin tolerance test (IPITT) were assessed. At euthanasia, blood was collected, and the liver and adipose tissue were weighed. Insulin, leptin, adiponectin, resistin, tumoral necrosis factor alpha (TNFα), interlekin-6 (IL-6), monocyte chemoattractant protein-1 (MCP-1), and plasminogen activator inhibitor-1 (PAI-1) were measured by an Elisa assay. The HOMA-IR index was calculated based on fasting glucose and insulin. Insulin, resistin, leptin and HOMA-IR were higher in HF-L and HF-O groups compared with the remainder groups (P < 0.0001). IL-6 was higher in the HF-L group compared with the other groups (P < 0.0005), whereas adiponectin levels were the lowest (P < 0.0001)...

Testaram-se neste trabalho, quatro fontes de lipídios (algodão, canola, girassol e milho) e três níveis de inclusão (1, 3 e 5 por cento), na alimentação de carpas comum (Cyprinus carpio L.), incorporadas à dieta, na fase de engorda. Os peixes iniciaram com peso médio inicial de 26,6 ± 2,02g e comprimento médio inicial 11,2 ± 0,09cm respectivamente para os tratamentos. As dietas foram formuladas dentro dos critérios para a espécie e para o sistema de produção, com ingredientes onde a proteína bruta e a energia ficassem estabilizadas em 28 por cento e 2.800 kcal de energia metabolizável/kg de ração, e oferecida na quantidade de 1 por cento do peso vivo ao dia, reajustado a cada 30 dias, na forma peletizada. Cada parcela experimental contou com seis peixes e utilizou-se um delineamento inteiramente casualizado, em esquema fatorial (4 fontes, 3 níveis) com 3 repetições. Os dados foram submetidos à análise de variância, teste F, ao nível de significância de 5 por cento e as médias comparadas pelo teste de Tukey. As variáveis peso médio final, comprimento médio final, conversão alimentar aparente e sobrevivência não apresentaram diferença significativa entre os tratamentos testados (P>0,05). Conclui-se, com base nos dados obtidos, que todas fontes e níveis de lipídios utilizados são eficientes na alimentação, devendo, portanto ser utilizado aquele que tiver valor econômico menor no momento. Também se concluiu que os diferentes tipos de rações experimentais não interferiram significativamente nas características do rendimento de carcaça e rendimento de filé.


In this research four lipids sources (cotton, canola, sunflower, corn) and three inclusion levels (1, 3 and 5 percent) were tested in common carp feeding (Cyprinus carpio L.) incorporated to the diet in the fattening stage. The fishes had start medium weight of 26,6 ± 2,02g and start medium length of 11,2 ± 0,09cm. Diets were formulated inside the criteria to the species and to the production system with ingredients in wich gross protein and energy were kept stable in 28 percent and 2800kcal of metabolizable energy/kg of ration. Diets were offered in the quantity of 1 percent of living weight per day readjusted every 30 days in the peletized form. Each experimental parcel comprised six fishes and used an entirely ramdomized design, in factorial (4 sources, 3 levels and 3 repetitions). The data were submitted to variance analisys F test to significant level of 5 percent, and the mediums compared by the Tukey test. The variables final medium weight, final medium length, feed conversion ratio and survival, showed no significant differences between the tested treatments (P>0,05). Based on the collected data, all sources and lipids levels used are efficient in the feeding. Thus, the one with lower economical value should preferably be used.
